Finish the app configuration

Production needs Clerk and Convex configuration. For an intentional non-production preview, set NEXT_PUBLIC_NODESMASH_DEMO_MODE=true.

NodeSmash only enters demo mode when neither service is configured, so a partial production setup cannot silently show sample data.
